Vegetarian Menu

​

Roasted Beet Salad Arugula and baby spinach salad topped with oven roasted beets, pistachios, and goat cheese crumbles with a lemon-honey vinaigrette.

Mediterranean Grilled Tofu & Summer Squash Grilled tofu marinated in a blend of tomato paste with Greek herbs & spices, served with a medely of grilled summer squash.

Grilled Veggie Farro Zucchini, eggplant, red bell pepper, onion and fennel, grilled and tossed with farro in a lemon-garlic vinaigrette, topped with fresh herbs and feta cheese crumbles.

Vegan Lentil Dahl Indian spiced green lentils simmered in coconut milk- broth

with tomatoes and green beans, served with cilantro-lime brown basmati rice.

Maria's Vegan Eggplant Rollatini Grilled Eggplant rolled and stuffed with cashew-nut "ricotta", baked in a tomato basil marinara sauce.

Cleanse and Detoxify

7 Veggie Soup Seasonal Squash, carrots, turnips, celery, parsnips, potatoes and leeks simmered in a fresh parsley broth. 

Asian Chopped Kale Salad Kale, purple cabbage, carrot, red bell pepper and green onions, with fresh cilantro and Thai basil, tossed in a ginger-soy sauce "vinaigrette"

Zesty Beet Salad Steamed beets and carrots tossed in a lemon-ginger dressing.

Collard Rainbow Wraps Steamed sweet potato "fries" spiced with turmeric, cumin and ginger wrapped in collard leaves with carrot, cucumber, red bell pepper, green onion, alfalfa sprouts and fresh herbs. Served with Asian ginger-soy dipping sauce.

Radish & Apple Slaw Radish and green apple "matchsticks" tossed in a cinnamon-lemon dressing.

Anti-Inflammatory Menu

Chia -Cacao Choco Pudding Ground chia and flax seeds soaked in cacao- almond milk, served with coconut whipped cream and seasonal berries.

Kale & Sweet Potato Salad with Pomegranate Vinaigrette Caramelized sweet potatoes tossed with Lacinato kale, shaved raddichio, pecans and pomegranate seeds served with pomrgranate-shallot vinaigrette.

Sicilian Chickpea & Escarole Soup Chickpeas and escarole simmered in vegetable broth with carrots, fennel, shallots and rosemary.

Brown Rice Salad with Crunchy Nuts & Seeds Sprouted Adzuki beand and lentils tossed with grated zucchini, brown rice, sunflower and pumpkin seeds in a lemon-chive vinaigrette.

Miso- Glazed Salmon with Baby Bokchoy Wild Alaskan Salmon roasted with miso/coconut-aminos  ginger glaze, served with pan sauteed baby bokchoy.
